So, this may not classify as baking because it's only equipment requirements are a toaster and butter knife, but it's my new favourite thing!
As you would all know by now, I am obsessed with baking with fruit. I love the flavours and textures they have to offer, from tart, to sweet, to sour... but eating them alone has always feels like a punishment, you now when you were a kid and you walk into the kitchen moaning,
"Muuumm, I'm hungry" whilst slouching and dragging your feet as you walk towards to the pantry in a manner intended to lead others to believe she's been starving you for weeks, and the reply comes as something along the lines of...
"Have a piece of fruit". That soul crushing disappointment when you turn, close the pantry door and mutter
"I'm not THAT hungry", is pretty much how my sweets loving heart feels when I try to convince myself to just have a piece of fruit.... but on the other hand, cake for lunch every day was seriously affecting my plans to shed a few kilos, so I concocted a slightly healthier option, Fruit Bruschetta!! My dietary saviour!
My current go to combos include, banana with Nutella, banana and maple syrup sprinkled with ground cinnamon, apple slices with Peanut Butter, apple slices on cinnamon spread, strawberries and Nutella, banana with mascarpone cheese a honey drizzle, pear and ricotta... the list is expanding every day!
It may not sound like an exciting 'baking' adventure, but my mid-afternoon snack has quickly become my most anticipated meal of the day... oh the combinations I could try!!!
